Nam Prik Ong
Ingredients (serves 2)
- Namjai Nam Prik Ong paste, 2 tablespoons
- Vegetable oil, 2 tablespoons
- Tomatoes, 1 cup
- Minced pork or chicken, 1 cup
- Sugar, 2 tablespoons
- Cooked water, ½ cup
- Spring onion / coriander for garnish
Method
- Stir-fry the nam prik ong paste in oil until fragrant
- Add the meat and stir-fry until combined with the paste
- Add the tomatoes and stir-fry for a bit, adding a little water, continuing until the tomatoes soften and everything comes together
- Season with sugar to taste
- Serve, garnished with spring onion or coriander
Nam Prik Ong Bolognese Spaghetti
Ingredients (serves 2)
- Namjai Nam Prik Ong paste, 2 tablespoons
- Vegetable oil, 2 tablespoons
- Tomatoes, 1 cup
- Minced onion, 1 whole
- Minced meat of your choice, 1 cup
- Cooked water, 1 cup
- Sugar, 2 tablespoons
- Tomato sauce, 2 tablespoons
- Worcestershire-style seasoning sauce, 1 tablespoon
- Ground black pepper, to taste
- Butter, 2 tablespoons (for tossing the pasta)
- Spaghetti, cooked, to taste
Method
- Stir-fry the nam prik ong paste in oil until fragrant
- Add the chicken and stir-fry until combined with the paste
- Add the onion and tomatoes, stir-fry briefly, adding a little water, and continue until the vegetables start to soften
- Season and taste as you go
- Serve over cooked spaghetti, plated nicely

Ingredients (serves 2)
- Namjai Nam Prik Ong paste, 2 tablespoons
- Vegetable oil, 2 tablespoons
- Tomatoes, 1 cup
- Minced onion, 1 whole
- Minced meat of your choice, 1 cup
- Cooked water, 1 cup
- Sugar, 2 tablespoons

- Chili sauce, 1 tablespoon
- Paprika powder, ½ tablespoon
- Ground cumin, ½ teaspoon
- Pepper, to taste
- Cheddar cheese, for topping
- Bread and sausages
Method
- Stir-fry the nam prik ong paste in oil until fragrant
- Add the meat and stir-fry until combined with the paste
- Add the onion and tomatoes, stir-fry briefly, adding a little water
- Season and taste as you go, continuing to stir-fry until everything comes together
- Serve over bread and sausages, top with cheese, and drizzle with your favorite sauce
Egg-Fried Tomatoes, Chinese Style
Ingredients (serves 2)
- Namjai Nam Prik Ong paste, 1 tablespoon
- Vegetable oil, 4 tablespoons
- Tomatoes, 1 cup
- Minced meat of your choice, ½ cup
- Cooked water
- Sugar, 1 tablespoon
- Tomato sauce, 2 tablespoons
- Pepper, to taste
- Spring onion, 2 stalks cut into pieces, plus more sliced for garnish
Method
- Heat 2 tablespoons of oil in a pan, add the eggs, and gently scramble until nicely golden and just cooked through, then set aside on a plate
- In the same pan, stir-fry the remaining oil with the nam prik ong paste until fragrant
- Add the meat and stir-fry until combined with the paste
- Add the tomatoes and spring onion, stir-fry, adding a little water
- Add the reserved egg, season and taste as you go, and stir-fry until everything comes together
- Serve garnished with sliced spring onion, alongside hot rice
