Method
- Stir-fry the curry paste in a pan until fragrant

- Namjai Sour Curry Paste, 2 curry spoons
- Water, 4 cups
- Fresh shrimp, 6 pieces
- Namjai concentrated tamarind juice, 2 tablespoons
- Fish sauce, 1 tablespoon
- Coconut sugar, 1 tablespoon
- Cha-om (acacia leaves), 1 handful
- Eggs, 2
- Fish sauce, 1 tablespoon
- Oil for frying the cha-om, 2 tablespoons
Method
- Make the cha-om omelet: beat the eggs with the cha-om, season with fish sauce, and mix well
- Heat oil in a pan and fry the cha-om-egg mixture until fragrant and cooked on both sides
- Drain, then cut into bite-sized squares and set aside in a bowl
- Make the sour curry: bring water to a boil, add the sour curry paste and stir until dissolved
- Season with tamarind juice, fish sauce, and coconut sugar to taste
- Add the shrimp and cook until the tails change color, then turn off the heat. Serve with hot rice and a fried egg on top

- Turn up the heat, add the kaffir lime leaves, Thai eggplant, and pea eggplant, stir well and let it come to a boil
- Turn off the heat, add the Thai basil and spur chili, and serve with rice or rice noodles, or alongside a boiled egg for extra flavor
