Recipes: Nam Prik Ong Dishes That Travel the World

Ask any Thai about their favorite chili dip and “nam prik ong” is sure to make the shortlist — kids love it, adults enjoy it, and it’s incredibly easy to make. Life gets even easier with a good ready-made curry paste doing the heavy lifting, so this bowl of nam prik ong comes together in just a few minutes. Make a batch to keep in the fridge and reheat whenever the craving hits — or if you want to have even more fun with it, Namjai has some secret recipes that turn this humble dip into a whole world tour in a bowl. We won’t tell anyone!

Nam Prik Ong

Ingredients (serves 2)

  1. Namjai Nam Prik Ong paste, 2 tablespoons
  2. Vegetable oil, 2 tablespoons
  3. Tomatoes, 1 cup
  4. Minced pork or chicken, 1 cup
  5. Sugar, 2 tablespoons
  6. Cooked water, ½ cup
  7. Spring onion / coriander for garnish

Method

  1. Stir-fry the nam prik ong paste in oil until fragrant
  2. Add the meat and stir-fry until combined with the paste
  3. Add the tomatoes and stir-fry for a bit, adding a little water, continuing until the tomatoes soften and everything comes together
  4. Season with sugar to taste
  5. Serve, garnished with spring onion or coriander

Nam Prik Ong Bolognese Spaghetti

Ingredients (serves 2)

  1. Namjai Nam Prik Ong paste, 2 tablespoons
  2. Vegetable oil, 2 tablespoons
  3. Tomatoes, 1 cup
  4. Minced onion, 1 whole
  5. Minced meat of your choice, 1 cup
  6. Cooked water, 1 cup
  7. Sugar, 2 tablespoons
  8. Tomato sauce, 2 tablespoons
  9. Worcestershire-style seasoning sauce, 1 tablespoon
  10. Ground black pepper, to taste
  11. Butter, 2 tablespoons (for tossing the pasta)
  12. Spaghetti, cooked, to taste

Method

  1. Stir-fry the nam prik ong paste in oil until fragrant
  2. Add the chicken and stir-fry until combined with the paste
  3. Add the onion and tomatoes, stir-fry briefly, adding a little water, and continue until the vegetables start to soften
  4. Season and taste as you go
  5. Serve over cooked spaghetti, plated nicely

Hello! Hot Dog

Ingredients (serves 2)

  1. Namjai Nam Prik Ong paste, 2 tablespoons
  2. Vegetable oil, 2 tablespoons
  3. Tomatoes, 1 cup
  4. Minced onion, 1 whole
  5. Minced meat of your choice, 1 cup
  6. Cooked water, 1 cup
  7. Sugar, 2 tablespoons
  8. Tomato sauce, 2 tablespoons
  9. Chili sauce, 1 tablespoon
  10. Paprika powder, ½ tablespoon
  11. Ground cumin, ½ teaspoon
  12. Pepper, to taste
  13. Cheddar cheese, for topping
  14. Bread and sausages

Method

  1. Stir-fry the nam prik ong paste in oil until fragrant
  2. Add the meat and stir-fry until combined with the paste
  3. Add the onion and tomatoes, stir-fry briefly, adding a little water
  4. Season and taste as you go, continuing to stir-fry until everything comes together
  5. Serve over bread and sausages, top with cheese, and drizzle with your favorite sauce

Egg-Fried Tomatoes, Chinese Style

Ingredients (serves 2)

  1. Namjai Nam Prik Ong paste, 1 tablespoon
  2. Vegetable oil, 4 tablespoons
  3. Tomatoes, 1 cup
  4. Minced meat of your choice, ½ cup
  5. Cooked water
  6. Sugar, 1 tablespoon
  7. Tomato sauce, 2 tablespoons
  8. Pepper, to taste
  9. Spring onion, 2 stalks cut into pieces, plus more sliced for garnish

Method

  1. Heat 2 tablespoons of oil in a pan, add the eggs, and gently scramble until nicely golden and just cooked through, then set aside on a plate
  2. In the same pan, stir-fry the remaining oil with the nam prik ong paste until fragrant
  3. Add the meat and stir-fry until combined with the paste
  4. Add the tomatoes and spring onion, stir-fry, adding a little water
  5. Add the reserved egg, season and taste as you go, and stir-fry until everything comes together
  6. Serve garnished with sliced spring onion, alongside hot rice
