  1. Namjai Panang Curry Paste, 1 curry spoon
  2. Coconut cream, 1 cup
  3. Meat of your choice, 1 cup
  4. Fish sauce, 1 tablespoon
  5. Namjai coconut sugar, 1 tablespoon
  6. Thai eggplant (pea eggplant), 1 handful
  7. Shredded kaffir lime leaves
  8. Sliced red spur chili

Method

  1. Stir-fry the curry paste in a pan until fragrant

  3. Add the meat and stir-fry until cooked
  4. Season with fish sauce and coconut sugar, then add the remaining coconut cream

  2. Water, 4 cups
  3. Fresh shrimp, 6 pieces
  4. Namjai concentrated tamarind juice, 2 tablespoons
  5. Fish sauce, 1 tablespoon
  6. Coconut sugar, 1 tablespoon
  7. Cha-om (acacia leaves), 1 handful
  8. Eggs, 2
  9. Fish sauce, 1 tablespoon
  10. Oil for frying the cha-om, 2 tablespoons

Method

  1. Make the cha-om omelet: beat the eggs with the cha-om, season with fish sauce, and mix well
  2. Heat oil in a pan and fry the cha-om-egg mixture until fragrant and cooked on both sides
  3. Drain, then cut into bite-sized squares and set aside in a bowl
  4. Make the sour curry: bring water to a boil, add the sour curry paste and stir until dissolved
  5. Season with tamarind juice, fish sauce, and coconut sugar to taste
  6. Add the shrimp and cook until the tails change color, then turn off the heat. Serve with hot rice and a fried egg on top

Method

  3. Add the remaining coconut milk and stir well
  4. Season with fish sauce and coconut sugar to taste
  5. Turn up the heat, add the kaffir lime leaves, Thai eggplant, and pea eggplant, stir well and let it come to a boil
  6. Turn off the heat, add the Thai basil and spur chili, and serve with rice or rice noodles, or alongside a boiled egg for extra flavor
