The fridge’s job is to keep ingredients fresh for longer — but that doesn’t mean you can store anything anywhere, because not every spot is equally cold. So which spot suits which ingredient? Namjai has some handy tricks to make sure you store things right, so let’s share them!
Seafood, meat, bread
Before putting meat into the freezer, wash it clean and pat it dry, then portion it into amounts suitable for a single cooking session and place it in a sealed bag or container. This helps prevent spoilage and can extend freshness for 3–6 months.
Eggs, dairy products
You can actually keep eggs in the egg rack on the fridge door, but another way to keep them fresher at a more stable temperature is storing them in a closed container to prevent knocks and moisture loss. Dairy products like milk, cheese, and yogurt can also be stored on the lower shelves.
Vegetables and fruit
Before refrigerating, remove any spoiled leaves, then wrap in paper or plastic wrap, or place in a bag — keeping vegetables separate from ripe fruit so the gas released by fruit doesn’t speed up vegetable spoilage. Storing them in the crisper drawer or a section with the right temperature helps preserve the most vitamins and minerals.
Curry paste
Since it doesn’t spoil easily and keeps for a long time, curry paste can simply be stored in the regular fridge compartment, on the upper shelf. If you don’t finish it, store it in a zip-lock bag. That said, we recommend using it up within a week of opening for the best freshness and aroma, as if freshly pounded.
Drinks, condiments
Things like water, soft drinks, fruit juice, or anything without dairy, along with various condiments, can be stored on the fridge door — just don’t overcrowd it, so the cold air can circulate properly.
From now on, if you store things the right way, your ingredients and food will stay just as fresh, tasting delicious no matter when you eat them.
